Citrus Season - Candied Peel

Candied Citrus Peel

makes about 2 cups

  • 3 oranges

  • 1 cup sugar for peel

  • 1 cup sugar (or so) for dusting

Cut the zest from oranges, leaving some but not much pith attached.  Slice into strips and boil in water for 5 minutes. Drain.

Combine with 1 cup water and sugar in a medium pot and bring to a boil.  Reduce to simmer and cook 30-40 minutes until peel is tender, translucent and liquid is a thick syrup.  Remove from heat.

Carefully with fork, remove strips from syrup and spread out on a baking tray heavily dusted with sugar.  Toss to coat. As they cool, break apart clumps. Allow to cool overnight.

Store in an airtight container for up to 3 months.

Favorites uses: dipped in melted dark chocolate to snack or mixed into baked goods.
