Eat More Herbs - Herb Salt

Herb Salt

makes about one cup

  • 1 cup coarse kosher salt

  • 3 loosely packed cups of your favorite herbs - rosemary, thyme, oregano, sage, etc.

  • up to 6 cloves fresh garlic - halved and any center sprout removed

If using garlic, pulse this first with half the salt by pulsing and then add the remaining salt and herbs before continuing. Add the herbs and pulse until the mixture is well combined and sandy.

Stir in the rest of the salt until well blended. Spread on a baking sheet and set in a dry location for several days to dry out fully. Store in clean jars for up to several months
